Does the name of the recipe not immediately make you interested? What exactly is a doughnut muffin? This recipe from King Arthur’s Baking Companion is actually pretty simple and aims to merely be reminiscent of a plain doughnut. There’s really nothing too special about these muffins, but I still hope they’re worth my time and resources.

Like I said, this recipe is very simple, and so are the ingredients. I didn’t leave anything out of this recipe and I don’t think you could really get away with leaving anything out. There may be some substitutions you can make, though.

Cooking Review:

Make Batter: 16 minutes

Just like with many other batters, the dry ingredients and wet ingredients are mixed separately before combining them. I whisked the dry ingredients in a larger bowl before melting the butter in the microwave on a low power and mixing it with the beaten egg and milk. Next, I added the wet ingredients to the dry ingredients and mixed until no more dry flour was visible.

Fill Cups & Bake: 30 minutes

I used some cooking oil to grease the cups of the muffin tin. You could use paper liners to make removing them super simple if you’re worried about sticking. I filled each cup about 3/4 of the way and baked them for 25 minutes.

Cool & Topping: 20 minutes

I let the muffins cool in the tin for about 10 minutes. In the mean time, I melted the remaining butter and mixed the sugar and cinnamon. I dipped the tops of the muffins in the butter and rolled them in the cinnamon sugar mixture.

Analysis:

When fresh, these muffins have a nice, slightly crisp exterior with a soft interior. The sweetness is just about right, with most of it coming from the topping. The interior mostly has a light aromatic nutmeg flavor, which pairs nicely with the sweet cinnamon topping. I wouldn’t say that this immediately reminds me of the typical doughnut, but if I think about it more like a cake doughnut, I can taste the similarities. At the end of the day, these are nice muffins that I think would pair nicely with a hot beverage. I’m going to give them a 7/10. They’re nothing special, but they are a nice basic muffin.
